This recipe for Pesto Grilled Vegetable Salad showcases grilled red pepper, green beans, red onion, and red potatoes, finished with a light lemon-olive oil dressing and fresh basil. The pesto is used sparingly to add subtle depth rather than overwhelm the other flavors.

Start with fresh, firm vegetables. For this salad I used:
- Red potatoes, sliced about 1/2 inch thick
- Red onion, peeled and cut into 1/2 inch rounds
- Red bell pepper, cut into flat strips
- Green beans, trimmed and cut into 2-inch pieces

Trim and slice the vegetables as described so they cook evenly on the grill. Toss the potatoes, bell pepper strips, and green beans in a large bowl with one tablespoon of pesto, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Use your hands to coat everything evenly. Keep the red onion rounds separate for a gentler treatment, since they can break apart while tossing.

Instructions
