Oven Roasted Crispy Broccoli is a simple, flavorful side dish that turns ordinary broccoli into something irresistible. With crisp edges, bright lemon, savory garlic and a touch of spice, this roasted broccoli recipe is vegan, gluten-free, and perfect for weeknights or entertaining. For an extra treat, try serving it with a creamy vegan alfredo-style sauce.

Why this works
Roasting concentrates the flavor of broccoli while creating crisp, caramelized edges that many people prefer to steamed or boiled florets. A quick lemony marinade and high-heat roasting bring out a bright, nutty flavor. Adding sliced almonds delivers crunch, and a sprinkle of nutritional yeast gives a savory, cheese-like finish without dairy. This method is fast, forgiving, and ideal for batches made ahead and roasted when you’re ready.
This sheet-pan approach keeps preparation minimal: trim and toss the broccoli with a bold mix of oil, lemon, garlic and seasonings, then roast until the florets are golden. The recipe is flexible—swap in cauliflower or halved Brussels sprouts if you like, or add other nuts or seeds for variety.
Because it reheats well and tastes great at room temperature, oven roasted broccoli is also a great option for potlucks, packed lunches, or meal prep.
Ingredients and Substitutions

- Fresh broccoli: Use crowns plus stems. Cauliflower makes a great substitute. Halved Brussels sprouts also work well.
- Lemon: Zest and juice for brightness—wash the rind before zesting.
- Oil: Choose a high-heat oil such as avocado or refined coconut oil for roasting at 450°F. For an oil-free option, a thin tahini-water dressing can help season the broccoli.
- Garlic: Fresh garlic gives the best flavor; press or mince it finely.
- Spices: Onion powder, dried parsley, dried dill, sea salt and crushed red pepper combine for balanced savory and herbal notes.
- Nutritional yeast: Optional, for a nutty, cheesy finish that keeps the dish dairy-free.
Health Benefits
- Broccoli: Anti-inflammatory, high in fiber, antioxidants and vitamin C—supporting digestion and immune health.
- Almonds: Provide healthy fats, vitamin E, magnesium, fiber and plant-based protein.
- Nutritional yeast: Adds B vitamins and a savory, cheesy depth to vegan dishes.
How to Cut Fresh Broccoli

Peel the woody outer layer of the stalk with a paring knife and discard or compost it.

Slice the remaining stem into 1/4″ rounds so they cook evenly with the florets.

Cut the crowns into bite-sized pieces and combine them with the sliced stems in a large mixing bowl.
Make the Broccoli Marinade

In a small bowl, whisk together the oil, lemon zest and juice, pressed garlic, sea salt, onion powder, dried dill and parsley. Add crushed red pepper for heat or black pepper for a milder kick. Pour the marinade over the broccoli and toss to coat thoroughly.

How to Oven Roast Broccoli
Preheat the oven to 450°F (232°C) and line a large rimmed baking sheet with unbleached parchment paper.

Spread the marinated broccoli in a single layer on the prepared pan. If needed, use a second sheet so pieces aren’t crowded.

Roast for 10 minutes, then scatter sliced almonds over the broccoli and continue roasting another 10–15 minutes until the florets are golden and crisp but not burnt. This two-stage approach helps the nuts toast without burning.

When the broccoli is done, toss with nutritional yeast if using, squeeze a bit more lemon over the top, and add extra crushed red pepper if you like more heat. Serve warm or at room temperature.
