Ingredients:
4 salmon fillets, skinned
1 tablespoon canola oil (or another neutral oil)
1 shallot, finely chopped
3 pepperoncini, seeded and minced (adjust to taste for heat and tang)
2 cups half-and-half
1 tablespoon flat-leaf parsley, chopped
2 tablespoons fresh dill, chopped, divided
4 lemon wedges, for serving

Serving tips: Keep the sauce warm and spoon it over the salmon just before serving. The mushroom rice can be prepared in advance and reheated gently—add a splash of broth if it needs loosening. For a wine pairing, a light, slightly off-dry white such as Riesling complements the creaminess and the tang of the pepperoncini without overpowering the salmon.
