Ingredients
- 4 chicken thighs (skin on, bone in)
- 4 chicken drumsticks (skin on, bone in)
- 2 red bell peppers, cut into thin strips
- 1 yellow bell pepper, cut into strips
- 1 white onion, finely sliced
- 1 garlic clove, peeled and kept whole
- 14 oz (400 g) tomato passata (tomato puree)
- 1/2 cup (125 ml) white wine
- Salt and pepper, to taste

Instructions
- Add 2–3 tablespoons of olive oil to a large pan over medium heat. Add the whole peeled garlic clove and fry gently for about 1 minute until it begins to colour, then remove and set aside.
- Place the chicken skin-side down in the pan and cook for 5–7 minutes until golden. Turn and brown on the other side for another 5 minutes, then remove the chicken and set aside.
- Add the sliced onion to the pan (add more oil if needed) and sauté for about 5 minutes until soft. Add the sliced peppers and cook for a further 5 minutes until they begin to soften.
- Return the chicken and garlic to the pan. Pour in the white wine and let it simmer and reduce for a few minutes. Stir in the tomato passata, season with salt and pepper, then cover and simmer on low for 25–30 minutes.
- Remove the lid and cook for an additional 15–20 minutes to thicken the sauce and concentrate the flavours. Serve hot with bread or your preferred sides.
