Russet or red potatoes can be used as substitutes; if you switch varieties, simply taste and adjust the salt and pepper so the dish isn’t under- or over-seasoned.

Which Meat is Best?

Choose a cut that stays tender without being overly lean. Pork tenderloin is my favorite for this recipe: it’s tender, not too fatty and remains juicy when simmered with the vegetables. Pork shoulder also works well, especially if you prefer richer flavor. You can use beef or chicken, but keep in mind chicken thighs may shred easily during cooking and lose their cubed shape.

Because this recipe simmers the meat rather than browning it first, it stays moist while the potatoes cook. If you do choose to brown your meat for extra color, cuts like pork shoulder or chicken thighs are best because they tolerate the additional cooking without drying out.

  • 1 lb pork meat (tenderloin or pork shoulder)
  • 2 large carrots, julienned or grated
  • 8 large Yukon Gold potatoes (peeled and cubed)
  • 2 small yellow onions, finely chopped
  • 1 1/2 teaspoons fine salt, divided (adjust to taste)
  • 3 tablespoons grapeseed or vegetable oil
  • 2 dried bay leaves
  • 1/4 teaspoon ground black pepper, divided (adjust to taste)
  • 2 tablespoons fresh dill, finely chopped
  • 1/4 cup fresh green onions, finely chopped (plus more for garnish)
  • Water (enough to cover the meat and later the potatoes)

Instructions

  1. Cook the pork: Cut 1 lb pork tenderloin into bite-size pieces (about 1/2-inch cubes). Place in a pot or Dutch oven, cover with water and bring to a boil. Skim off any foam, rinse the meat if desired, then return it to the pot. Add 4 cups fresh water, 1/2 teaspoon salt, 1/8 teaspoon ground black pepper and 2 bay leaves. Cover, bring to a boil, reduce to medium-low and simmer for 20–25 minutes until the meat is tender.
  2. Sauté the aromatics: While the meat cooks, heat 3 tablespoons oil in a skillet over medium heat. Add the chopped onions and sauté 4–5 minutes until translucent. Add the julienned or grated carrots and cook another 4–5 minutes until softened. Remove from heat and set aside.
  3. Prepare the potatoes: Peel and cube the potatoes into 1/2-inch pieces. Place them in cold water to prevent discoloration until ready to use.
  4. Combine and simmer: When the meat is tender, add the sautéed carrots and onions and the drained cubed potatoes to the pot. Sprinkle the remaining 1 teaspoon salt and 1/8 teaspoon ground black pepper (or adjust to taste). Push the potatoes down so they are covered by liquid; if necessary add a little more water. Cover and simmer for about 30 minutes, until the potatoes are fork-tender. Placing the potatoes on top of the meat and carrots before covering helps them steam gently without falling apart.
  5. Finish with herbs: Stir in 2 tablespoons chopped dill and 1/4 cup chopped green onions very gently, using a stainless steel spoon if possible. Mix only until combined to avoid mashing the potatoes. Garnish with additional herbs before serving.
  6. Storage: Cool leftovers to room temperature, refrigerate in a sealed container and reheat over medium heat until piping hot.
