Ingredients

  • 2 ½ cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 ½ teaspoons baking soda
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ tablespoon vanilla extract
  • 1 egg
  • 1 tablespoon orange juice
  • ¼ cup molasses
  • 1–2 tablespoons granulated sugar for dipping the cookies

Instructions

  1. In a large bowl, sift together the flour, ground ginger, baking soda, cinnamon, cloves, and salt. Set aside.
  2. In the bowl of a stand mixer or with a hand mixer, cream the softened butter with both sugars until light and fluffy. Add the vanilla and then beat in the egg.
  3. Stir in the orange juice and molasses. (Tip: spray the measuring cup with cooking spray before measuring molasses to help it release more easily.)
  4. On low speed, gradually add the dry ingredient mixture to the wet ingredients, mixing a little at a time until just incorporated. Do not overmix—the dough will be sticky.
  5. Place the dough in the freezer for 25–30 minutes to firm up slightly; check at 20 minutes so it doesn’t freeze solid. Chilling makes the dough easier to shape.
  6. Preheat the oven to 350°F (175°C). Shape the dough into 1-inch balls. Dip the top of each ball into granulated sugar and place them on an ungreased cookie sheet.
  7. Use a glass or the bottom of a measuring cup to gently flatten each cookie slightly for an even bake.
  8. Bake for 8–10 minutes. The cookies should be just slightly under-baked in the center; they will finish setting as they cool, which keeps them soft and chewy.
  9. Allow cookies to cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
  10. Store cookies in an airtight container for up to 3 days. For longer storage, freeze baked cookies separated by layers of parchment.
