Table Talk with Tawnie
Small-batch recipes are my go-to when I want something fresh from the oven without committing to a full tray. This cookie recipe was developed so I could bake just six cookies — perfect for sharing or for a solo treat. It’s quick, flexible, and forgiving, and you don’t need any special equipment.

Ingredient Notes
(Full recipe below in the recipe card)

- All-purpose flour: Measure by the spoon-and-level method to avoid packing too much flour into the cup; too much flour yields dry cookies.
- Sugars: The brown and granulated sugars are mixed into melted butter to form a smooth paste — no creaming needed. Break up any clumps of brown sugar before mixing.
- Beaten egg: Only a tablespoon of beaten egg is used in this small batch. Whisk one egg and measure out 1 Tbsp. from it.
- Chocolate chips: Use your favorite mix — mini chips plus regular semi-sweet chips work well, or use chunks for pockets of melted chocolate.
- Flaky sea salt: A light sprinkle on top of each fresh cookie brightens the flavor and balances the sweetness.

Step-by-Step Directions
(Full recipe card with exact measurements and times follows)
Mix wet ingredients
Whisk together melted butter, dark brown sugar, and granulated sugar until smooth. Add the beaten egg, milk, and vanilla, then mix until combined.
Add dry ingredients
Sprinkle flour, salt, baking soda, and baking powder over the wet mixture and fold gently until just combined. Fold in the chocolate chips. Avoid over-mixing.
Scoop dough
Portion the dough into six even scoops (about 2 Tbsp. each) on a prepared baking sheet, leaving room for spreading.
Bake & enjoy
Bake at 350°F (175°C) for 7–9 minutes until the edges are set and lightly golden while the centers remain slightly soft. Press a few extra chocolate chips into the tops after baking and sprinkle with flaky sea salt. Let the cookies cool a few minutes on the baking sheet before transferring to a rack.
Expert Tips
- Spoon and level flour: Use a spoon to transfer flour into the measuring cup, then level with a knife to avoid excess flour.
- Do not over-mix: Fold until the flour is incorporated; over-mixing develops gluten and makes cookies tough.
- Pull slightly early: Cookies continue to set on the hot baking sheet after leaving the oven. Remove them while centers still look just underdone for soft interiors.
- Finish while warm: Press extra chips and a sprinkle of flaky salt onto the warm tops for an attractive, bakery-style finish.
Need more or fewer cookies?
This small batch makes six cookies. For a single cookie, look for single-serve cookie recipes; for a crowd, try scaling up or baking sheet-pan cookies. Mini, giant, or thin-and-chewy variations are all possible by adjusting portion size and bake time.
Variations / Substitutions
- Gluten-free: Substitute a 1:1 gluten-free baking flour in place of all-purpose flour.
- Different chocolate: Try chocolate chunks, dark chocolate, milk chocolate, or white chocolate. A mix of sizes creates texture and uneven melting for pockets of chocolate.
- Add nuts: Fold in chopped walnuts, pecans, or almonds for crunch; reduce the chips slightly if adding nuts.
Storage & Freezing
- Store at room temperature: Place cooled cookies in an airtight container for up to 5 days.
- Freeze baked cookies: Cool completely, then freeze in an airtight container for up to 3 months.
- Freeze dough: Scoop dough into 2 Tbsp balls and freeze in a single layer. Bake from frozen, adding a minute or two to the bake time as needed.
