Ingredients

Mango (or other fruit) Salsa:

  • 1 ½ cup diced peeled mango
  • ½ red pepper, finely diced
  • 1 clove garlic, crushed
  • ¾ cup chopped cilantro
  • ½ seeded jalapeño, finely diced (optional)
  • ¼ cup finely diced red onion
  • juice of 1 lime
  • 1 tablespoon olive oil
  • ½ teaspoon sea salt

Coconut Rice:

  • 2 cups jasmine rice
  • 1 cup coconut milk
  • 1 ½ cups water
  • ½ teaspoon salt

Halibut:

  • 4 halibut fillets
  • 3 tablespoons olive oil
  • salt and pepper to taste

Instructions

Mango Salsa

  1. Combine diced mango, red pepper, crushed garlic, cilantro, jalapeño (if using), red onion, lime juice, olive oil, and sea salt in a bowl. Stir gently to combine and set aside to let the flavors meld while you prepare the rice and fish.

Coconut Rice

  1. Stir jasmine rice, coconut milk, water, and salt together in a medium, heavy-bottomed pot. Bring to a boil, then reduce heat to low, cover, and simmer for 25 minutes or until the rice is tender and the liquid has been absorbed. Fluff with a fork before serving.

Halibut

  1. Brush the halibut fillets with olive oil and season both sides with salt and pepper. Grill or pan-sear the fillets over medium-high heat for 3–4 minutes per side, depending on thickness, until the fish is opaque and flakes easily with a fork. Serve each fillet over a bed of coconut rice and top with a generous scoop of mango salsa.
