  • Preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with liners or lightly grease the cups.
  • Drain the pineapple and reserve the juice. In a large bowl, whisk together the eggs, drained crushed pineapple, vegetable oil, and 1 tablespoon of the reserved pineapple juice.
  • Add the dry carrot cake mix and stir until combined. The batter will be fairly thick; if it seems too stiff, add a little more of the reserved pineapple juice until you reach a scoopable consistency.
  • Fold in the chopped pecans, then divide the batter evenly among the prepared muffin cups.
  • Bake for 18–25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
  • Allow the muffins to cool in the pan for 5–10 minutes, then transfer to a wire rack to cool completely. Serve plain or spread with a thin layer of cream cheese for extra richness.
