Puff pastry keeps the process fast: frozen sheets thaw quickly and bake into flaky, golden rectangles. Ready to make the puffs?
Start by thawing one box of frozen puff pastry according to package directions (both sheets). While the pastry thaws, prepare the cheesecake topping: soften 8 ounces of cream cheese, zest one lemon (about 1/4 teaspoon), and squeeze about 1/2 tablespoon of lemon juice.
In a medium bowl, beat together the softened cream cheese, lemon zest, lemon juice, 1/4 cup sugar, and 1/4 teaspoon vanilla until smooth. Add one egg and beat until combined. This gives a creamy, tangy cheesecake layer that bakes lightly on the pastry.

Once the pastry sheets are thawed, cut each sheet into six rectangles for a total of 12 pastries. Arrange them on a parchment-lined baking sheet and preheat the oven to 375°F (190°C). Spoon the cheesecake mixture evenly onto each rectangle, leaving a small border around the edges.
