  • 1 tablespoon egg replacer mixed with 2 tablespoons water
  • ½ teaspoon vanilla extract
  • 1 cup (240ml) buttermilk
  • 1 cup (170g) fresh or frozen blueberries

Instructions

  • Preheat the oven to 425°F (220°C). Grease a jumbo muffin tin or line it with sturdy liners and set aside.
  • In a large bowl, whisk together the gluten free flour blend, baking powder, baking soda, cinnamon (if using), and salt. Set aside.
  • In a separate bowl, combine the melted and cooled butter with the granulated sugar. Add the prepared egg replacer and vanilla, then stir in the buttermilk until evenly blended.
