Ingredients

The photos show the ingredients used in this homemade pecan pie cheesecake. Below are notes on a few key ingredients and suggested substitutions to help you prepare.

Ingredients in various size bowls and plates labeled as graham crackers, light brown sugar, vanilla extract, light corn syrup, eggs, pecans, nutmeg, cinnamon, sea salt flakes, unsalted butter, sour cream, heavy cream, granulated sugar, and cream cheese on a white marbled background.
  • Cream Cheese. Use full-fat cream cheese, preferably the block style softened to room temperature for the smoothest batter.
  • Pecans. Halves or chopped pecans both work. I recommend toasting them before using to intensify flavor. For texture, chop most of them but leave a few larger pieces to keep some bite in the topping.
  • Sour Cream. Full-fat sour cream yields the creamiest filling. If needed, you can substitute whole-milk ricotta or full-fat Greek yogurt in a 1:1 swap.
  • Vanilla Bean Paste or Extract. Vanilla bean paste adds visible flecks and a richer vanilla flavor, but pure vanilla extract works well as a 1:1 substitute.

How to Make the Recipe

Here is a concise overview of how to make the salted pecan pie cheesecake. Follow the detailed instructions in the recipe card for exact measurements and timings.

Quick Tip: Grease a 9-inch springform pan and wrap the bottom and sides in several layers of heavy-duty foil to protect against water in the water bath. An oven bag or slow cooker liner around the foil adds extra protection.

Graham Cracker Crust

Pulverizing graham crackers into fine crumbs in a small food processor for cheesecake crust on a white background.

Step 1. Pulse graham crackers in a food processor until they become fine crumbs. If needed, process in batches.

Step 2. Add melted butter and granulated sugar and pulse until the mixture resembles wet sand.

Step 3. Press the mixture into the prepared springform pan, pressing firmly into the bottom (and a bit up the sides if you like). Bake the crust for 8–10 minutes at 325ºF and let it cool slightly before adding the cheesecake batter.

Cheesecake Batter

Whipping cream cheese in a glass mixing bowl, then adding in the sugars, sour cream, spices, and vanilla.

Step 1. Beat room-temperature cream cheese until light and fluffy. Add sour cream, granulated and brown sugars, cinnamon, nutmeg, and vanilla, mixing until smooth.

Step 2. With the mixer on low, add eggs one at a time, mixing just until incorporated. Avoid overmixing to reduce the chance of cracks.

Step 3. Pour the batter into the cooled crust. Place the springform pan in a roasting pan and carefully add boiling water to create a water bath that reaches about halfway up the sides of the springform pan.

Step 4. Bake at 325ºF for 55–60 minutes, until the center is slightly jiggly. Turn off the oven and leave the cheesecake inside, with the door closed, for 45 minutes to cool slowly. Remove, cool completely on a rack, then chill in the refrigerator for at least 4 hours or overnight.

Pecan Pie Topping

Toasting chopped pecans on a parchment paper lined baking sheet on a white background.

Step 1. Toast chopped pecans on a parchment-lined baking sheet at 300ºF for 8–10 minutes to bring out their flavor. Let them cool.

Step 2. In a medium saucepan, melt butter over medium heat. Stir in granulated sugar, brown sugar, heavy cream, light corn syrup, and vanilla until combined.

Step 3. Add the toasted pecans, bring the mixture to a brief boil, then simmer 2–3 minutes. Remove from heat and let the topping thicken as it cools.

Step 4. Spread the cooled pecan pie topping over the chilled cheesecake and finish with a light sprinkle of sea salt flakes. If you make the topping in advance, store it refrigerated and warm briefly before using.

Recipe FAQs

Do I need to bake my cheesecake in a water bath?

Yes. A water bath helps prevent the cheesecake from drying out, sinking, or cracking by adding moisture and moderating oven temperature.

Can I make the pecan pie topping in advance?

Yes. Make it a day or two ahead and store it in a sealed container in the fridge. Reheat gently before using if needed.

How long does cheesecake last in the refrigerator?

Stored tightly covered, cheesecake will keep about 2–3 days in the fridge.

Can you freeze cheesecake?

Yes. Wrap tightly in plastic wrap and foil. Whole cheesecakes or individual slices can be frozen for up to a month. Thaw overnight in the refrigerator.

  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, lightly packed
  • 3/4 cup full-fat sour cream, room temperature
  • 2 tsp vanilla bean paste or vanilla extract

  • 1/2 cup light brown sugar, lightly packed
  • 2 tbsp light corn syrup
  • 1/2 cup heavy cream
  • 2 tsp vanilla extract
  • Sea salt flakes, for garnish

Instructions

Graham Cracker Crust

  • Preheat oven to 325ºF and place rack in center. Grease a 9-inch springform pan and wrap the bottom and sides with 5–6 layers of heavy-duty foil for the water bath.
  • Pulse graham crackers into fine crumbs. Mix crumbs with granulated sugar and melted butter until similar to wet sand.
  • Press crumbs into the bottom of the prepared pan and bake 8–10 minutes. Cool slightly before filling.

Cheesecake

  • Beat cream cheese on medium-high speed until light and fluffy. Add sour cream, granulated and brown sugars, cinnamon, nutmeg, and vanilla; mix until smooth.
  • Reduce mixer speed, add eggs one at a time, and blend each until just incorporated. Do not overmix.
  • Pour batter into the cooled crust. Place springform pan inside a roasting pan and carefully pour boiling water into the roasting pan until it reaches about halfway up the springform pan sides.
  • Bake at 325ºF for 55–60 minutes, until center is slightly jiggly. Turn off oven and keep the door closed; let the cheesecake cool in the oven for 45 minutes.
  • Remove from oven, unwrap foil and any liners carefully, then cool completely on a rack. Chill in the refrigerator at least 4 hours or overnight.

Salted Pecan Pie Topping

  • Preheat oven to 325ºF. Toast pecans on a parchment-lined sheet for about 8 minutes; set aside.
  • In a saucepan, melt butter over medium heat. Add granulated sugar, brown sugar, heavy cream, light corn syrup, and vanilla; stir to combine.
  • Add toasted pecans, bring briefly to a boil, then simmer 2–3 minutes. Remove from heat and cool until thickened.
  • When cheesecake is chilled, spread the pecan pie topping over the top and sprinkle with sea salt flakes. Store leftovers tightly covered in the refrigerator for 2–3 days.

Notes

  • Use a springform pan. It makes removing the cheesecake much easier after chilling.
  • Don’t skip the water bath. It prevents cracking and keeps the texture creamy and even.
  • Wrap well. Use multiple layers of foil and an optional oven bag or slow cooker liner to protect against leaks from the water bath.
  • Keep the oven door closed. Do not open the oven during the baking or the slow cooling period to preserve the gentle, moist environment.
