Ingredients

For the Cheese Filling

  • 1 package cream cheese (224 g / 8 oz)
  • 2 cups cottage cheese (454 g / 16 oz)
  • 4 tbsp Parmesan cheese
  • 2 cups shredded cheddar cheese (224 g / 8 oz)
  • 2 tsp dried sage
  • 1 tsp dried oregano

For the Dough

  • 1 3/4 cups warm water (420 ml)
  • 1 tbsp sugar
  • 1 tbsp active dry yeast
  • 6 cups all-purpose flour (720 g)
  • 1/4 cup olive oil
  • 1 tbsp salt

Instructions

To make the Cheese Filling

  1. In a large bowl, beat the cream cheese with a hand mixer until smooth.
  2. Add the cottage cheese, Parmesan, shredded cheddar, sage, and oregano. Mix with a large spoon or your hands until fully incorporated. Set aside.

To make the Dough

  1. Pour the warm water into a mixing bowl, add the sugar and yeast, gently stir, and let sit 10–15 minutes until the yeast becomes active and bubbly.
  2. Add 1 cup of flour, then the olive oil and salt. Mix to combine.
  3. Add another 4 1/2 cups of flour and stir with a wooden spoon until the dough begins to pull away from the sides of the bowl.
  4. Turn the dough onto a lightly floured surface, sprinkle the remaining 1/2 cup flour, and knead 5–7 minutes until it begins to come together. Add a little flour only if the dough sticks.
  5. Let the dough rest 5 minutes, then continue kneading until smooth and springy.
  6. Place the dough in a lightly oiled bowl, cover with plastic wrap, and allow to rise for 3–4 hours.

To Assemble and Bake

  1. Preheat the oven to 350°F (175°C).
  2. Lightly flour your work surface and turn out the risen dough.
  3. Divide the dough into the number of portions you plan to bake (see notes above for pan guidance).
  4. Press each piece into a flat disk with your palms and let rest 10–15 minutes to reduce springback.
  5. Line your baking pan with parchment paper. Press a dough piece into the center of the pan and spread it outward until the pan is fully lined.
  6. Brush the dough with olive oil, then evenly spread the cheese filling across the lined pan.
  7. Bake 25–30 minutes or until the filling is golden and the crust is baked through.
  8. Remove from the oven and let rest 5–10 minutes before slicing to allow the filling to set slightly.
