- 14 oz tofu, pressed and sliced into 8 thick slices
- Greens (lettuce, baby spinach, or similar)
- Blanched broccoli florets or broccoli slaw
- Toasted sesame seeds (optional)
- Burger buns, rolls, or tortillas (use gluten-free if needed)
General Tso’s Sauce
- 1/4 cup water or low-sodium vegetable broth
- 3–4 tbsp sugar (coconut sugar or other sweetener works)
- 1/4 cup low-sodium soy sauce (use tamari to make gluten-free)
- 1 tbsp mirin or other rice cooking wine
- 2–3 tbsp rice vinegar
- 1.5 tsp toasted sesame oil
- 1 tbsp cornstarch (for thickening)
- 1 tsp sambal oelek (optional) or sriracha or red pepper flakes to taste
- 2 tsp grated fresh ginger
- 3 cloves garlic, minced
Instructions
- Press the tofu for at least 10 minutes using a tofu press or wrapped in paper towels with weight on top. Slice into 8 even slabs and arrange in a single layer in a baking dish.
- In a bowl or small blender, combine water or vegetable broth, sugar, soy sauce, mirin, rice vinegar, sesame oil, cornstarch, sambal (if using), grated ginger, and garlic. If blending, add everything except the garlic and stir the minced garlic in at the end. Taste and adjust sweetness or heat. If you didn’t use broth, add a pinch of salt to balance flavors.
- Pour the sauce evenly over the tofu so the slices are partially submerged. Let the tofu marinate 15 minutes at room temperature, or cover and refrigerate overnight for deeper flavor.
- Preheat the oven to 400°F (200°C). Bake the tofu for about 25 minutes, or until the sauce has thickened and glazed the tofu. If the sauce reduces too quickly, you can baste the slices and rotate the pan for even cooking.
- While the tofu bakes, prepare sandwich components: blanch broccoli briefly until bright green and slightly tender, drain well, and pat dry. Toast buns or warm tortillas in a skillet over medium heat.
- Assemble the sandwich: layer greens and blanched broccoli, place tofu slices, drizzle with additional sauce from the pan, and sprinkle with toasted sesame seeds if desired. Serve immediately.
Make it in a skillet
- Press and slice or cube the tofu. Heat 1 tsp oil in a skillet over medium heat and cook tofu until golden on several sides, 5–7 minutes, flipping occasionally.
- Pour the prepared sauce into the skillet with the tofu (and any quick-cooking veggies you like). Bring to a boil, then reduce heat and simmer until the sauce thickens and coats the tofu. Serve in buns, wraps, or over rice or grains.
Variations & Tips
- For deeper flavor, add 1 tsp tomato paste or ketchup to the sauce before cooking.
- If you want extra crunch in the sandwich, substitute thinly sliced cucumber, carrots, or cabbage for the broccoli, or add cilantro and sliced jalapeño for brightness and heat.
