Ingredients

  • 1 ½ sleeves saltine crackers (about enough to cover a 16″ x 11″ pan)
  • 1 ¼ cups (2 1/2 sticks) unsalted butter
  • 1 ¼ cups light brown sugar, packed
  • 8 oz Heath Milk Chocolate Toffee Bits (or your preferred chocolate/toffee chips)

Instructions

  1. Preheat the oven to 400°F (200°C). Grease or spray a rimmed baking sheet (about 16″ x 11″) and line it with foil or parchment, allowing the lining to come up the sides. If you use foil, lightly grease the foil so the toffee doesn’t stick.
  2. Arrange a single layer of saltine crackers to cover the bottom of the prepared pan. Small gaps are okay, but try for even coverage.
  3. In a medium saucepan, combine the butter and light brown sugar. Heat over medium, stirring until the butter melts and the mixture comes to a boil. Once boiling, continue to boil gently for 3 full minutes while stirring to prevent scorching. The mixture will be very hot—use caution.
  4. Carefully pour the hot toffee evenly over the crackers, spreading if necessary to coat them. Transfer the pan to the preheated oven and bake for 5 minutes. The toffee should bubble and coat the crackers.
  5. Remove the pan from the oven and immediately sprinkle the milk chocolate toffee bits evenly over the hot toffee layer. Let the chocolate sit for a few minutes to soften, then spread it into an even layer if desired. Allow the entire pan to cool completely at room temperature until the chocolate sets and the candy hardens.
  6. Once set, lift the foil or parchment out of the pan and break the candy into pieces. Store in an airtight container at room temperature for up to a week, or freeze for longer storage.

Tips: work carefully when handling the hot sugar mixture; use a long-handled spoon or heatproof spatula. If you prefer, swap the Heath toffee bits for chopped chocolate bars or use a mix of dark and milk chocolate for variety. For a festive touch, sprinkle coarse sea salt or crushed peppermint over the chocolate while it is still warm.
