- 4 large eggs, room temperature
- 200 grams granulated sugar
- 100 grams light brown sugar, lightly packed
- 1 tsp vanilla extract

- 56 grams unsalted butter, melted
- 100 grams light brown sugar, lightly packed
- 3 large eggs, room temperature
- 2 tsp vanilla
- 120 grams salted caramel sauce (cooled)
- 1/2 tsp salt
- 250 grams pecans, chopped
- 85 grams chocolate morsels, for topping
- Pinch of sea salt flakes, for finishing
Method
Salted Caramel Sauce
- If making homemade salted caramel, prepare it first and allow it to cool so it won’t loosen the topping when mixed in.
Brownies
- Preheat the oven to 350°F (177°C). Grease and line a 9″x13″ pan with parchment paper.
- In a heatproof bowl or saucepan, melt the butter with the semi-sweet chocolate. Set aside to cool slightly.
- Whisk together the flour, cocoa powder and salt in a medium bowl.
- Whisk the eggs, granulated sugar, brown sugar and vanilla until just combined; avoid over-mixing.
