Tips for making Chinese lettuce wraps
Meat
Ground chicken, turkey, or pork work best because they readily absorb marinades. Beef and lamb are usable but have stronger, meatier flavors that can overpower the wrap. For best results, marinate the meat for at least an hour so it develops flavor before stir-frying.
Chinese sausage
Small pieces of Chinese sausage (lap cheong) add both color and a sweet-savory note. Dice the sausage and sauté it first to render the fat, then use that fat to cook the remaining ingredients. The sausage can be set aside and returned to the mix near the end.

Lettuce
Choose a lettuce with pliable leaves that form a cup. Iceberg and butter lettuce are both excellent choices. - Garnish: 1 head iceberg or butter lettuce, 50 g scallions, cilantro, carrot slivers, toasted pine nuts
- Sauces: hoisin sauce and Sriracha or preferred chili sauce
Instructions
- Soak mushrooms: In a bowl, combine 2 cups water and 2 Tbsp light soy sauce. Wash and soak dried shiitake mushrooms overnight or until softened. Drain and dice before using.
- Prep vegetables and sausage: Peel and dice jicama (or slice water chestnuts), slice lotus root thinly then dice, and dice the rehydrated mushrooms. Dice the Chinese sausage and set aside.
- Marinate the meat: In a bowl, mix the ground meat with corn starch, salt, white pepper, sugar, 1 Tbsp light soy sauce, ½ Tbsp sesame oil, 1 Tbsp whiskey (optional), and 1 Tbsp hoisin sauce. Let the meat marinate for at least 1 hour.
- Cook sausage and meat: Heat a wok or large frying pan. Add the diced Chinese sausage and sauté to render the fat; remove the sausage and set aside. Add the marinated meat and stir-fry until nearly cooked through. Remove the meat to a container with the sausage.
- Stir-fry vegetables: Heat 2 Tbsp cooking oil in the wok. Add the chopped garlic and fry briefly, then add the diced jicama, lotus root, and mushrooms. Stir-fry quickly—do not overcook lotus root or jicama to preserve crunch.
- Combine and finish: Return the meat and sausage to the wok, mix well with the vegetables, and taste. If you want more savory flavor, add up to ½ tsp chicken bouillon powder or salt. Stir in the scallions and remove from heat.
