These Carrot Cake Cheesecake Bars are a perfect spring dessert: moist, warmly spiced carrot cake swirled with a smooth, tangy cheesecake layer. They’re easy to portion, great for gatherings, and make a lovely addition to any Easter or springtime spread.
Some days time flies and other days it crawls—I can’t believe March is already halfway done. With spring and Easter approaching, I wanted a dessert that felt seasonal but was easy to share. Enter these Carrot Cake Cheesecake Bars.
They combine everything you love about classic carrot cake—cinnamon, nutmeg, sweet grated carrots, and a hint of pineapple for moisture—with a rich cream cheese filling. The result is a tender, marbled bar that’s simple to serve and even easier to love.

Carrot Cake Cheesecake Bars
These bars are essentially two batters in one pan: a carrot cake batter and a cheesecake batter. Because you prepare both components separately, they take a little extra effort, but once the batters are mixed the assembly is quick and the oven does the rest. The cheesecake layer keeps the bars creamy while the carrot cake adds texture and spice.
For the carrot cake batter you’ll need grated carrots, oil, sugars, eggs, vanilla, warm spices, flour, leavening agents, and a bit of crushed pineapple for extra moisture and flavor. The cheesecake filling is a classic mix of cream cheese, sugar, eggs, a touch of flour for stability, vanilla, and sour cream for tang and silkiness.
To assemble, spread most of the carrot cake batter in a lined pan, pour the cheesecake batter over it, then dollop the remaining carrot batter on top and swirl lightly. Bake until the top is lightly golden and the center is set. After cooling, refrigerate so the cheesecake layer firms up—this makes cleaner slices and better texture.
Tips for Success
- Tap each batter bowl gently on the counter about 30 times to release trapped air bubbles before pouring—this helps prevent large gaps in the finished bars.
- Let the bars cool completely at room temperature, then chill for at least 4 hours before cutting to ensure clean, firm slices.
- For smooth slices, dip a sharp knife in hot water, wipe it dry, and slice. Wipe the blade between cuts for the cleanest edges.
- Store the bars in an airtight container in the refrigerator for up to 5 days. They keep well and the flavors meld nicely after a day.
- These bars are great chilled or at cool room temperature. If you prefer a sweeter finish, serve with a light dusting of powdered sugar or a dollop of whipped cream.
These Carrot Cake Cheesecake Bars are sure to be a hit with friends and family—rich, balanced, and full of spring flavor. Enjoy!

Carrot Cake Cheesecake Bars
Ingredients
For the Cheesecake:
- 16 oz (two 8-oz packages) cream cheese, softened
- 2/3 cup granulated sugar
- 2 tsp all-purpose flour
- 2 large eggs
- 2 tsp pure vanilla extract
- 1/2 cup full-fat sour cream
For the Carrot Cake:
- 1/2 cup vegetable oil
- 8 oz (about 1/3 cup) crushed pineapple, drained
- 2/3 cup granulated sugar
- 1/3 cup light brown sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/4 cups all-purpose flour
- 1 1/4 cups finely grated carrots
Instructions
- Preheat the oven to 350°F. Line a 9×13″ light metal pan with foil or parchment, leaving an overhang. Spray the liner with cooking spray and set aside.
- Make the cheesecake: In a large bowl with a stand mixer or handheld mixer, beat the cream cheese and granulated sugar until smooth, about 2 minutes. Add the flour and then the eggs one at a time, mixing well after each. Mix in the vanilla and finally the sour cream until smooth. Tap the bowl gently on the counter about 30 times to release air bubbles. Set aside.
- Make the carrot cake batter: In a clean bowl whisk together the oil, drained crushed pineapple, granulated and brown sugars, eggs, and vanilla until combined, about 30 seconds. Add cinnamon, nutmeg, baking powder, baking soda, salt, and flour; mix until just combined. Fold in the grated carrots. Tap the bowl gently on the counter about 30 times to remove air bubbles.
- Assembly: Pour about 2/3 of the carrot cake batter into the prepared pan and spread to the edges. Pour the cheesecake mixture over the carrot cake layer. Drop spoonfuls of the remaining carrot batter over the cheesecake and use a clean butter knife to swirl the layers lightly—don’t over-marble.
- Bake for 35–40 minutes, or until the top is lightly golden and the center is mostly set. A slight jiggle is fine, but it shouldn’t be runny. Cool completely at room temperature, then refrigerate for at least 4 hours to set before cutting into squares. Store leftovers airtight in the fridge for up to 5 days.

I love the balance of warm spice and cream cheese tang in these bars — they’re comforting, portable, and easy to serve at a party. They also hold up well for potlucks and make a nice, slightly unexpected twist on traditional carrot cake.
