  • 5 g fresh ginger, julienned
  • 2 large garlic cloves, minced

Rice

  • 1 cup jasmine rice, washed and drained
  • 1 cup salted chicken broth (or salted water)
  • reserved chicken fat pieces (from trimming)
  • handful of scallions, whole or halved

Ginger & scallion oil

  • 2–3 scallions, finely chopped
  • 1 tbsp ginger, minced (adjust to taste)
  • 2–3 tbsp neutral oil (vegetable, canola, or peanut)
  • salt, to taste

Instructions

  1. Prepare the chicken: Pat the chicken thighs dry with paper towels. Trim any large pieces of excess fat, and set those trimmed fat pieces aside—they will add extra flavor when cooked with the rice.
  2. Salt scrub: Sprinkle about 1 tablespoon of salt over the skin and rub the chicken gently with your hands for several minutes. This light scrubbing helps remove any residue and improves skin texture. Rinse the chicken briefly under cold water to remove the salt, then pat thoroughly dry.
  3. Season the chicken: Rub the thighs with a drizzle of neutral oil, then season lightly with 1/8 teaspoon salt and 1/8 teaspoon white pepper. Add the julienned ginger and minced garlic, massaging the aromatics into the meat so they adhere to the skin and surface.
  4. Prepare the rice: Rinse the jasmine rice under cold water until the water runs clear, then drain. Place the rinsed rice in the rice cooker and add 1 cup of salted chicken broth (or water seasoned to taste). Stir gently to distribute.
  5. Arrange chicken and aromatics: Lay the seasoned chicken thighs on top of the rice so they sit without overlapping. Add the reserved chicken fat pieces and a handful of scallions around the thighs. Close the rice cooker and start the regular cooking cycle.
  6. Make the ginger-scallion oil while the rice cooks: Heat the neutral oil in a small pan until hot but not smoking. Combine the chopped scallions and minced ginger in a heatproof bowl, pour the hot oil over them, and season with a pinch of salt. The oil will release the aromatics and create a fragrant finishing sauce.
  7. Finish and rest: When the rice cooker finishes, allow the chicken to rest for 5–10 minutes with the lid closed. Open the cooker, remove the chicken to a cutting board, and discard any large pieces of fat. Fluff the rice gently with a fork so the grains separate and have absorbed the broth.
  8. Slice and serve: Remove the bones from the chicken and slice the meat against the grain. Plate the rice, top with sliced chicken, and drizzle the ginger-scallion oil over the chicken and rice. Garnish with fresh cucumber slices or extra scallions if desired. Serve with soy sauce, chili sauce, or a light dipping sauce on the side.
  9. Storage and reheating: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop with a splash of water or broth to keep the rice moist.
