Ingredients
- 4 handfuls of arugula
- 1/2 small cucumber, thinly sliced
- 1 large carrot, grated lengthwise
- 2 medium tomatoes, diced
- 1/2 cup cooked lentils
- 1/4 cup Dutch mimolette, diced
- 1/4 cup aged cheddar, diced
- 4 walnuts, crushed
- 1/4 cup fresh parsley, chopped
- 2 tbsp classic French vinaigrette (olive oil, vinegar, mustard)
Instructions
