Ingredients

For the Brownies

  • 2/3 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 2 sticks unsalted butter
  • 1 (10-ounce) bag bittersweet chocolate chips (60% cacao recommended)
  • 3 large eggs, room temperature
  • 1 1/4 cups sugar
  • 2 tablespoons cold brewed coffee
  • 2 teaspoons pure vanilla extract
  • Cocoa for dusting the pan

For the Chocolate Crust

  • 6 ounces finely crushed chocolate graham crackers
  • 2 tablespoons sugar
  • 1 tablespoon cocoa powder
  • 6 tablespoons unsalted butter, melted
  • 1/8 teaspoon salt

For the Chocolate Filling

  • 2/3 cup light corn syrup
  • 2/3 cup granulated sugar
  • 4 ounces good quality bittersweet chocolate (about 4 ounces of chips or chopped chocolate)
  • 1/2 stick butter
  • 3 large eggs

For the Chocolate Ganache

  • 1 cup heavy whipping cream
  • 2 bars bittersweet chocolate (4 ounces each, 60% cacao recommended)
  • 3 tablespoons light corn syrup

Instructions

Brownies

  1. Preheat the oven to 350°F (175°C).
  2. Butter the bottom and sides of a 9 x 9-inch square baking pan. Line with parchment paper so it hangs a couple of inches over the sides, then butter the parchment and dust the pan lightly with cocoa. Set aside.
  3. In a medium bowl, sift or whisk together the flour, baking powder, and salt. Set aside.
  4. Cut the butter into pieces and place it in a microwave-safe bowl. Heat for about 40 seconds, then add the chocolate and whisk until smooth and combined. Set aside to cool slightly.
  5. In a large bowl, use an electric mixer to beat the eggs, sugar, coffee, and vanilla on medium speed until blended. Add the chocolate mixture and mix on medium to combine. Add the dry ingredients and mix on low just until incorporated.
  6. Pour the batter into the prepared pan and smooth the top with an offset spatula. Gently shake the pan to level the batter.
  7. Bake about 35 minutes, or until a toothpick inserted in the center comes out with moist crumbs (not completely clean). If the toothpick is clean, the brownies are overbaked. Leave the oven on for the next steps.
  8. Let the brownies cool for 5 minutes, then lift them from the pan using the parchment overhang. Allow them to cool completely on the parchment. Once cool, break the brownies into large chunks and place them in a bowl; set aside.

Chocolate Crust

  1. Combine the crushed graham crackers, sugar, cocoa, salt, and melted butter in a medium bowl. Press the mixture into the bottom and up the sides of a 9-inch deep-dish pie plate.
  2. Bake the crust in the preheated 350°F oven for 10–12 minutes, until it is dry and set. Remove from oven and allow to cool while you prepare the filling.

Chocolate Filling

  1. In a medium saucepan, combine the light corn syrup and 2/3 cup granulated sugar. Stir and bring to a boil over medium heat, then remove from heat.
  2. Add the 4 ounces of bittersweet chocolate and 1/2 stick of butter to the hot syrup mixture. Let it sit for about one minute, then whisk until smooth. Set aside to cool slightly.
  3. In a large bowl, whisk the 3 eggs. Gradually whisk the chocolate mixture into the eggs until fully combined.
  4. Pour the filling into the prepared crust and level it by gently shaking the pie plate. Bake for 40–45 minutes, until the filling is set but still slightly soft in the center. Transfer the pie to a wire rack and let it cool completely.

Chocolate Ganache

  1. Heat the heavy cream in a medium saucepan over medium heat until it just begins to simmer (or heat in a microwave-safe bowl). Remove from heat.
  2. Add the 2 bars (about 8 ounces total) of bittersweet chocolate and 3 tablespoons light corn syrup. Allow the mixture to sit for one minute, then whisk until smooth and glossy.

To Assemble

  1. Pour about half of the ganache over the bowl of brownie chunks. Toss gently with a spoon or your hands to coat the pieces evenly.
  2. Spoon the coated brownie pieces onto the cooled pie filling, mounding slightly in the center.
  3. Drizzle the remaining ganache over the top of the brownies in a decorative pattern.
