Healthy Shepherd’s Pie Stuffed Peppers: A Nutritious Twist on a Classic Comfort Food
If you love the cozy flavors of shepherd’s pie but want a lighter, vegetable-forward version, these stuffed peppers are a perfect choice. They retain the savory depth of the original—onions, herbs, a rich tomato base and a buttery mashed potato topping—while using lentils for plant protein and fiber. The peppers add vitamins and antioxidants, and the whole dish reheats and freezes well, making it ideal for meal prep or a quick weeknight dinner.

Steps to make Shepherd’s Pie Stuffed Peppers
Make the mashed potatoes
Start by boiling peeled, chopped potatoes until fork-tender (about 15–20 minutes). Drain, then mash with dairy-free butter or ghee, a splash of milk or plant milk, sour cream or plain yogurt, garlic powder, salt and pepper to taste. If using leftover mashed potatoes, you can skip this step entirely.
Prepare and assemble the peppers
- Preheat oven: 375–400°F (190–200°C).
- Prep peppers: Halve and seed the peppers and arrange them cut-side up in a baking dish.
- Cook filling: Heat olive oil in a large skillet over medium heat. Sauté diced onion and minced garlic until softened, about 3–5 minutes. Add lentils (or cooked ground meat), frozen peas and carrots, tomato paste, coconut aminos or soy sauce, Worcestershire, parsley, dried thyme and rosemary, salt and pepper. Stir in the broth and let the mixture simmer over low heat for about 8–10 minutes until flavors meld and liquid reduces.
- Stuff peppers: Spoon filling into each pepper half, pressing gently to pack the mixture. Top each with a generous layer of mashed potatoes; a piping bag or spoon both work.
- Bake: Cover with foil and bake 35–40 minutes. Remove foil and broil for 5–7 minutes if you want the potato topping browned—watch closely to prevent burning.
- Rest and serve: Let the peppers cool for a few minutes before serving. Garnish with chopped chives or parsley if desired.
Tips & Variations
- Protein swaps: Use ground turkey, beef, tempeh crumbles, or beans for different textures and flavors.
- Extra vegetables: Add mushrooms, zucchini, spinach, or corn to boost nutrition and bulk.
- Meal prep: Assemble and bake ahead, or freeze fully cooked peppers for up to three months. Reheat in a 375°F oven until warmed through.
- Make it cheesy: If not dairy-free, sprinkle grated cheese on the potato topping before broiling.
