- For pumpkin cake:
- 1 cup pumpkin puree
- 1 cup brown sugar
- ½ cup vegetable oil or canola oil

- In a medium bowl, beat the room-temperature cream cheese with the granulated sugar, eggs and flour on high speed until smooth and free of lumps.
- Add the vanilla extract and mix just until blended.
- Spread half of the pumpkin cake batter into the bottom of the prepared pan.
- Spoon half of the cheesecake batter in dollops over the pumpkin batter—do not spread or swirl; leave the dollops intact.
- Add the remaining pumpkin batter in dollops around the cheesecake dollops, again without spreading.
- Dollop the remaining cheesecake batter over the layers and use an offset spatula to gently spread into an even top layer.
- Bake for 50–60 minutes. If the top browns too quickly, tent loosely with foil for the last 20–30 minutes.
- The cake may puff and develop small cracks while baking; it will settle as it cools and will be covered with frosting.
- Remove from the oven and let cool completely in the pan on a wire rack.
- Refrigerate the cake for at least 4 hours or overnight to set fully.
- Beat the softened cream cheese and butter together in a medium bowl until creamy and smooth.
- Gradually mix in the powdered sugar until combined and smooth.
- Add the vanilla and sour cream (or milk) and mix until well blended.
- Spread the frosting evenly over the chilled cheesecake.
- Cover and refrigerate until ready to serve. Before serving, run a thin knife around the cake to release the springform pan ring and sprinkle the edges with chopped walnuts or pecans if desired.
