These sliders work well when you want to focus on the crab. The recipe keeps the crab as the star—just enough binder to hold the cakes, a bit of Old Bay or seafood seasoning for balance, and crispy bacon for texture and a savory punch. Sautéing the crab cakes in butter gives them a golden crust and rich flavor.

What type of crab is best for crab cakes

Different kinds of crab meat suit different dishes. For crab cakes, you generally want a sweet, firm variety that holds together while still showcasing chunks of crab.

  • Jumbo lump or colossal — large pieces from the crab’s swimmer fin muscle. Rare and delicately flavored; best served simply to savor the meat itself.
  • Super lump — slightly smaller pieces of jumbo lump; ideal for crab cakes because it offers substantial chunks without being too large.
  • Backfin — flakier, a mix of small lumps and shredded meat; great for soups, dips and recipes where a finer texture is acceptable.
  • Claw — darker, firmer meat with a stronger flavor; works well in chowders, stuffings and heartier preparations.

Recipe details

The crab cake mixture comes together quickly: sauté onion and celery, then fold them with crab meat, Worcestershire, Dijon, mayonnaise, egg, breadcrumbs, bacon and parsley. Handle the crab gently so the chunks remain intact. Refrigerating the formed patties briefly helps them hold their shape, and sautéing in butter forms a crisp, golden exterior.

Servings: 12 mini sandwiches • Calories: ~280 kcal per sandwich • Author: Amy Casey

Ingredients

  • 3 tablespoons salted butter, divided
  • 1/3 cup finely diced onion
  • 1/3 cup finely chopped celery
  • 1 pound super lump crab meat
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon Dijon mustard
  • 1/4 cup mayonnaise, plus more for assembling
  • 1 large egg, beaten
  • 1/2 cup seasoned bread crumbs
  • 1/2 cup finely chopped cooked bacon (about 5 thick slices)
  • 1 tablespoon chopped fresh parsley
  • 12 slider rolls
  • 12 tomato slices
  • Mixed leaf lettuces

Instructions

  1. Heat a sauté pan over medium heat and add 1 tablespoon of butter. When melted, add the onion and celery and sauté 3–4 minutes until the onion is translucent. Transfer to a large bowl.
  2. Add the crab meat, Worcestershire sauce, Old Bay, Dijon, mayonnaise, beaten egg, bread crumbs, bacon and parsley to the sautéed vegetables.
  3. Gently fold ingredients to combine, taking care not to break up the lumps of crab meat.
  4. Using a 1/4-cup measure, form 12 crab cakes. Place on a baking sheet, cover with plastic wrap and refrigerate for 20 minutes to firm up.
  5. Heat the sauté pan again with 1 tablespoon butter. Sauté crab cakes in batches, about 3–4 minutes per side, until golden brown and crispy. Add more butter as needed.
  6. Remove cooked crab cakes to a platter. To assemble, spread a little mayonnaise on the bottom half of each slider roll, top with a crab cake, a tomato slice and lettuce, then replace the top bun.
  7. Arrange on a platter and serve warm.

Notes

  • Super lump crab meat is preferred for crab cakes because it provides large, sweet chunks that hold together with minimal binder.
  • Handle the crab gently to preserve texture; overmixing will create a pasty cake instead of distinct crab pieces.
  • Chilling the formed cakes before cooking improves texture and helps them keep their shape.
  • Sautéing in butter yields a rich flavor and an attractive golden crust.
