Tips for making the Amazingly Easy Spinach Chicken Parmesan
This recipe is straightforward, but two simple steps will ensure the best result: use softened butter and drain the spinach thoroughly.
If the butter is too cold, the topping won’t become smooth; small lumps will remain. If the thawed spinach isn’t well drained, it will release excess moisture and make the topping watery. Squeeze the spinach to remove as much liquid as possible. From a 10 oz (280 g) frozen package you should end up with about 6 oz (170 g) of drained spinach, which is what the recipe uses.
I used frozen spinach for convenience and consistency — especially in colder months when fresh spinach can be variable. The combination of salted butter and grated Parmesan usually provides enough seasoning, but add a pinch of unrefined sea salt or Himalayan salt if you prefer it saltier.
First, place the chicken breasts in a glass or ceramic baking dish.

Set aside.

Put the well-drained spinach into a bowl, add freshly grated Parmesan and softened butter, then mix until smooth with an electric mixer.

Instructions

- In a bowl, mix the drained spinach, grated Parmesan, softened butter and white pepper with an electric mixer until well combined.
- Divide the topping among the chicken breasts. Use wet fingertips to press the mixture into an even layer over each breast.
- Bake for 30–40 minutes, or until the chicken is cooked through and the juices run clear.
