Today I’m sharing a favourite cookie: Browned Butter Mascarpone Chocolate Chunk Cookies, plus a simple technique that speeds up dough development so you can enjoy bakery-style cookies sooner. These cookies combine nutty browned butter, tangy mascarpone and intense dark chocolate for a rich, chewy centre and caramelized edges.

The technique I tried comes from Kamozawa and Talbot of Ideas in Food, whose experimentation with food science has inspired many cooks. Their vacuum-sealed dough method accelerates the interaction between fats and starches, helping the flour hydrate faster so the dough develops the same depth of flavour you get from an extended chill—without waiting a full day.

To test the method, I prepared my adapted version of Browned Butter Mascarpone Chocolate Chunk Cookies and split the dough into three portions so I could compare results:

  • I vacuum-sealed one portion and refrigerated it while the oven preheated.
  • I chilled a second portion on a baking sheet in the refrigerator.
  • I placed the third portion in an airtight container and chilled it for 36 hours the traditional way.

Even without professional lab equipment, the sealed dough changed colour more quickly, developing deeper, richer tones. The cookies made from vacuum-sealed dough baked up with a beautiful golden hue, crisp, caramelized edges and a compact, chewy centre that was noticeably more developed than the dough chilled for only a short time.

For clarity: I experimented with both chocolate chips and roughly chopped chocolate. Depending on timing and how I chopped the chocolate, pictures may show either. What mattered was the texture and flavour: the browned butter added a toasty, nutty aroma; the mascarpone contributed creaminess and chew; and the dark couverture delivered intense chocolate notes.

I also sprinkled a little smoked sea salt on some cookies while they were still warm to lift the chocolate and caramel notes—optional, but delicious. If you make browned butter regularly, it becomes a go-to ingredient: spread on toast, folded into batters, or used in frostings.

If you have a home vacuum sealer, try packaging your cookie dough and chilling it under vacuum. The method works well with many cookie recipes and is a great shortcut when you want developed flavour without a long wait.

Ingredients

  

  • 113 grams browned butter
  • 85 grams mascarpone
  • 1 vanilla bean, scraped use a quality vanilla bean
  • 140 grams organic coconut blossom sugar or brown sugar
  • 50 grams granulated sugar
  • 1 large egg
  • 224 grams unbleached all-purpose flour
  • pinch sea salt
  • 6 grams cornstarch
  • 4 grams baking soda
  • 500 grams 70% dark couverture, roughly chopped choose a high-quality dark chocolate

Method

 

  1. Preheat the oven to 350ºF (180ºC). Line two cookie sheets with parchment or silicone mats.
  2. Combine the browned butter, scraped vanilla bean, mascarpone and both sugars in the bowl of a stand mixer fitted with the paddle attachment. Mix until smooth.
  3. Add the egg and mix on medium-high until the mixture is light and fluffy, stopping to scrape the bowl as needed.
  4. Add the flour, cornstarch, sea salt and baking soda, mixing until just combined.
  5. Fold in the roughly chopped dark chocolate until evenly distributed.
  6. Immediately package and vacuum seal the dough if using the vacuum method. Use right away or chill until needed.
  7. Using a small ice cream scoop, portion the dough onto a large baking sheet, spacing evenly. Flatten each mound slightly.
  8. Bake on the middle rack for 10–12 minutes if the dough is chilled; allow a few fewer minutes for unchilled dough. Edges should be golden and centers set but still soft.
  9. Transfer the baking sheet to a wire rack and let cookies cool. Serve warm or at room temperature.
