Serves 1 (Makes 6 small pancakes using 1/4 cup batter each, or 3 larger pancakes using 1/2 cup batter each)

Ingredients

  • 1/2 cup rolled oats
  • 1/2 banana, sliced
  • 2 large egg whites
  • 2 Tbsp unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1/4 cup nonfat Greek yogurt
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder

Directions

  1. Place all ingredients in a blender and blend until you have a smooth, thick batter. Scrape down the sides if needed so everything is evenly combined.
  2. Spritz a medium skillet with cooking spray and warm it over medium heat.
  3. Once the pan is hot, measure 1/4 cup of batter for each pancake and pour onto the skillet. If you prefer larger pancakes, use a 1/2 cup measure — note that nutrition values will increase per pancake.
  4. Cook until small bubbles form on the surface and the edges look set, then flip carefully. Cook an additional 1–2 minutes on the second side until golden and cooked through.
  5. Repeat with the remaining batter, lightly re-spraying the pan between batches as needed.
  6. Serve warm with your favorite toppings and enjoy.
