  • 1 large onion sliced
  • 1 ½ – 2 pounds boneless skinless chicken breast

  • 1 18 ounce bottle of barbecue sauce about 2–2½ cups

Instructions 

  • Slice the onion and place it in the bottom of the slow cooker.
  • Place the raw chicken on top of the onions. Season both sides with salt and pepper.
  • Pour the barbecue sauce over the chicken (use most of the bottle, reserving a little if you want extra for serving). Flip the pieces to coat them thoroughly.
  • Cover and cook on low for 4–6 hours or high for 2–3 hours, until the chicken shreds easily.
  • Shred the chicken with two forks right in the cooker, then stir the shredded meat into the sauce. If needed, cook a bit longer so it pulls apart easily.
