Sugar-Free Gluten-Free Chocolate Parfait Recipe

I’ve received many requests for gluten-free and sugar-free versions of chocolate parfaits, including ones that use Jell-O instant pudding. I don’t recommend using sugar-free instant pudding regularly because it contains aspartame, an artificial sweetener that has been questioned for potential health risks. If you prepare this parfait using a sugar-free, fat-free chocolate instant pudding mix, expect about 8 grams of carbohydrates per 1/2 cup serving. A cleaner alternative is to make a no-cook, pudding-like chocolate mousse made with avocado and sweetened naturally with dates. That version avoids artificial dyes and sweeteners and delivers a smoother, more wholesome flavor. If you prefer a slightly lower glycemic option, substitute a small amount of agave nectar or another low-glycemic sweetener for some or all of the dates. It requires a bit more effort than using a mix, but it’s delicious and generally a healthier choice. Enjoy!

Gluten Free Sugar Free Chocolate Parfait

Yield: Makes 4 large parfaits

A gluten-free, sugar-free chocolate parfait layered with fresh strawberries and granola clusters. Two approaches included: a quick Jell-O instant pudding version and a natural, no-cook dairy-free version.

Ingredients:

  • 1 1/2 to 2 cups granola (I used cluster-style granola)
  • 20 large strawberries, fresh or thawed if frozen, sliced
  • For the Jell-O Pudding Version
  • 1 large (2.1 oz.) package sugar-free instant chocolate pudding mix
  • 3 cups non-fat milk
  • For the Natural No-Cook Version
  • One batch of No-Cook Dairy-Free Chocolate Mousse (avocado and dates-based)

Instructions:

  1. If using the instant pudding mix, prepare it according to the package directions and chill until set. For the natural version, prepare the no-cook chocolate mousse following the recipe you prefer; chill until thickened.
  2. Choose clear dessert glasses or parfait cups for an attractive presentation. Begin with a heaping tablespoon or two of chocolate pudding or mousse in the bottom of each glass.
  3. Add a layer of sliced strawberries over the chocolate layer, then add a layer of granola clusters. Use enough granola to provide texture but not so much that it overwhelms the dessert.
  4. Repeat the layers—chocolate, strawberries, granola—until the glass is nearly full, finishing with a final chocolate layer on top.
  5. Garnish with a few strawberry slices and a light sprinkle of granola. Serve immediately for the crispest texture, or chill briefly before serving if you prefer the granola slightly softened.

Tips and Variations

For a lighter dessert, add an extra layer of strawberries and reduce the amount of pudding. This increases fruit content and lowers the proportion of pudding per serving.

If you prefer a dairy-free parfait, use the no-cook chocolate mousse made with avocado and dates in place of the instant pudding. The mousse provides healthy fats and natural sweetness without artificial ingredients.

To reduce the glycemic impact, substitute part of the date sweetness in the mousse with a little agave nectar, or use fewer dates and add vanilla extract and unsweetened cocoa powder to maintain depth of flavor.

For crunch options other than granola, try chopped toasted nuts or gluten-free cereal clusters for varying textures.

Assemble desserts shortly before serving if you want the granola to stay crunchy. If you need to prepare ahead, keep components separate and layer just before serving.

Store any leftover parfaits covered in the refrigerator for up to 2–3 days. Note that granola will soften over time, and fresh berries are best consumed within a day or two for optimal texture and flavor.
