A Day of Vegan Eating: Smoothie Bowl, Miso Broth, Snacks and an Evening Out
Curious what a vegan eats in a day? This is an honest snapshot from a recent day during a personal spring cleanse for body, mind, and soul. I’m sharing a full day of eating without staging every meal, so it reflects real cravings, practical choices, and how plant-based meals can be simple, nourishing, and satisfying.
Morning: Smoothie Bowl to Satisfy a Cold Craving
Even though it was a cold morning, I woke up craving a smoothie bowl. I don’t usually start the day this way, but cravings can be a good guide. My bowl was a mango-and-blueberry blend made with non-dairy yogurt and oat milk, boosted with maca and a touch of cacao powder. I topped it with an energy bite and a few extra toppings for texture and a bit of natural sweetness.
Lunch: Warming Miso Broth Packed with Vegetables
After the chilly start, lunch needed to be warming and comforting. I made a vegetable-packed broth flavored with miso, tamari, garlic, and onion to create deep, savory notes. To make it more substantial I added a colorful mix of vegetables, a block of tofu for protein, and a portion of unicorn noodles. A drizzle of sesame oil finished the bowl, giving a nutty aroma and enhancing the overall flavor.

Snacks: Energy Bites for Sweet Cravings
Between meals I snacked on an energy bite—small, dense balls made from whole-food ingredients. These bites are a reliable way to curb sweet cravings without turning to processed snacks. I’ll share the recipe soon; they’re a staple when I want something quick, portable, and satisfying.
Evening: An Opening Event and Light Dinner
Later in the day I attended the opening of a cozy neighborhood yoga school with a friend. The event offered light, healthy snacks—vegetables with hummus, date balls, and a few dumplings—which I enjoyed in moderation. I also had a small glass or two of vegan red wine as part of the evening. During my current spring cleanse I’m limiting alcohol to special occasions, so this was a conscious exception.

After returning home I opted for a late, light dinner: the same vegetable-rich miso soup from lunchtime, this time with an added block of soft or firm tofu for extra protein. A warm bowl of broth felt comforting and helped settle the day. While unwinding, I finished the last episode of a sci-fi series I’ve been watching—perfect late-night relaxation alongside a soothing meal.
Reflection: Simple, Plant-Based, and Flexible
Looking back, the day was built around whole-food, plant-based meals: a smoothie bowl, vegetables and broth, energy bites for snacks, and a couple glasses of wine as an exception. My current practice involves avoiding heavily processed foods and reducing gluten and oil when my body asks for it, though I still use small amounts of flavorful oils like sesame oil for taste.
I’m considering turning these full-day posts into short videos at some point. For now I’ll keep sharing honest, easy-to-follow accounts of what I eat and why—practical ideas for anyone curious about vegan or plant-based daily meals.
What did you eat today? I’d love to hear about your plant-based meals, snacks, or favorite warming bowls.
One Love,
A.J.
