Ingredients

For the Chicken

  • 2 Chicken breasts, diced
  • ½ cup Soy sauce
  • 4 tablespoons Honey (or brown sugar)
  • 2 tablespoons Rice vinegar
  • 2 teaspoons Sesame oil
  • 2 cloves Garlic, minced
  • 2 teaspoons Cornstarch (added later)

For the Bowl

  • 2 cups White rice or jasmine, rinsed
  • 1 cup Cucumber, thinly sliced
  • 1 cup Shredded carrots
  • 1 Red onion, thinly sliced
  • Extra teriyaki sauce, sesame seeds, hot sauce, or spicy mayo, for serving (optional)

Instructions

  1. In a medium bowl, whisk together the soy sauce, honey (or brown sugar), rice vinegar, sesame oil, and minced garlic until the sugar dissolves.
  2. Place the diced chicken in a zip-top bag or shallow dish and pour in half of the marinade. Refrigerate for at least 30 minutes, or up to 8 hours, to develop flavor.
  3. When ready to cook, heat a large skillet over medium-high heat. Add the marinated chicken (discarding the used marinade) and sauté for about 3–4 minutes until the pieces start to brown.
  4. Pour the remaining half of the marinade into the skillet with the chicken. Stir in the cornstarch and continue cooking for 2–3 minutes, allowing the sauce to thicken and coat the chicken.
  5. Meanwhile, cook the rinsed rice according to the package directions.
  6. To assemble, divide the rice among bowls. Top each bowl with teriyaki chicken, sliced cucumber, shredded carrots, and red onion. Drizzle with extra sauce if desired and finish with sesame seeds, hot sauce, or spicy mayo to taste.
