Tender, flavorful chicken in a slightly sweet, garlicky sauce—an easy weeknight meal that stretches to feed a family and tastes great reheated.
Ingredients
  • 2 lbs boneless skinless chicken breasts or thighs
  • 3 tbsp soy sauce
  • 2 tbsp seasoned rice wine vinegar (or apple cider vinegar)
  • 1/2 cup honey
  • 6 garlic cloves, crushed
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 5–6 tbsp butter, cut into pats
Instructions
  1. Place the chicken in the slow cooker in a single layer if possible.
  2. In a small bowl, whisk together the soy sauce, rice wine vinegar, honey, crushed garlic, paprika, garlic powder, onion powder, salt, and pepper until smooth.
  3. Pour the sauce over the chicken, making sure pieces are evenly coated.
  4. Dot the top of the chicken with pats of butter.
  5. Cover and cook on high for 4 hours or on low for 6 hours. If using frozen chicken, add approximately 1 hour to the cooking time.
  6. When the chicken is done, it should be very tender and easy to shred with two forks.
  7. Shred the chicken right in the slow cooker and stir to coat it in the sauce, or remove the chicken and reduce the sauce on the stovetop if you prefer a thicker glaze.
  8. Serve over cooked rice with a green vegetable or side salad.
  9. Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Reheat gently on the stovetop or in the microwave.
