⭐ Why You’ll Love Mixed Bean Salad

Think of this as a modern, simplified take on seven-bean salad. The mix of textures—tender canned beans, crisp diced peppers and onions—paired with a tangy, slightly sweet balsamic dressing makes it especially refreshing in warm weather. It travels well for picnics and is simple to scale up for larger groups. The prep is quick and mostly hands-off while the salad chills and the flavors marry.

🥘 Ingredients to Have on Hand

Cold Green Bean Salad ingredients arranged in individual bowls on a table with labels on each ingredient.

This recipe relies largely on canned beans, which makes it pantry-friendly and easy to assemble. Key ingredients include:

  • Canned green beans (regular cut or French-style—regular gives more bite).
  • Black beans for color and a firmer texture.
  • White beans such as Great Northern, Navy, or Cannellini for creaminess.
  • Garbanzo beans (chickpeas) for a nutty bite.
  • Balsamic vinegar: use true balsamic vinegar, not a glaze, for the right balance of sweetness and acidity.
  • Celery seed: adds a faint, savory celery note—celery salt can be substituted but reduce added salt accordingly.

📖 Substitutions and Variations

This salad is flexible—use as many or as few bean varieties as you like. Some ideas:

  • Five-bean salad: Combine green beans with four other bean varieties.
  • Three-bean salad: Use green beans, kidney beans and garbanzo beans for a simpler version.
  • Vinegar options: Balsamic brings sweetness and depth, but apple cider or red wine vinegar also work well.
  • Onions: Sweet onions are milder; red, white, or yellow onions can be used in smaller amounts if you prefer less sweetness and more bite.
  • Oil: Neutral vegetable oil works best here; olive oil changes the flavor profile and can be used if desired.

Pro tip: Use seven 15-ounce cans of beans for a full, traditional mix—feel free to double up on any varieties your family prefers.

🥗 How to Make Mixed Bean Salad

  1. Make the balsamic sauce: In a medium saucepan combine balsamic vinegar, sugar, vegetable oil and celery seed. Whisk and heat until it comes to a boil. Stir briefly as it heats so the sugar dissolves, then remove from the heat.
  2. Drain and rinse beans: Open the cans and pour the beans into a large colander. Rinse under cool water and shake off excess liquid.
  3. Prep vegetables: Dice the sweet onion, yellow pepper and red pepper and add them to the drained beans.
  4. Cool the sauce: Pour the hot sauce into a heat-safe container and chill in the refrigerator until it is fully cooled—this prevents cooking the beans and peppers when combined.
  5. Toss and chill: When the sauce is cooled, pour it over the bean mixture and toss gently until everything is evenly coated. Cover and refrigerate for at least 5 hours or overnight to let the flavors develop. The salad can be served sooner if needed, but chilling improves texture and flavor.

💭 Recipe FAQs

Can I use raw green beans? You can use fresh green beans, but cook or steam them briefly and cut into 2-inch pieces first. Raw beans are too firm and won’t absorb the dressing the same way. Canned green beans are the easiest option.

Do canned green beans need cooking? No. Canned green beans are already cooked and may be used straight from the can after draining and rinsing.

How long does the salad keep? Store in an airtight container in the refrigerator for up to five days. Stir before serving to redistribute the dressing.

🍽 What to Serve with Mixed Bean Salad

The salad pairs well with grilled meats, burgers, sandwiches, and many Tex-Mex or Mexican dishes. It provides a bright contrast to rich or smoky mains and works equally well alongside pizza or roasted chicken.
