Instant Pot Roasted Asparagus Soup (AIP, Paleo)

Ingredients
  • 2 lbs. fresh asparagus
  • 3 tablespoons coconut oil, divided
  • Pinch of sea salt, garlic powder, and Herbes de Provence
  • 1 large leek, sliced
  • 1 tablespoon minced garlic
  • 1 head cauliflower, chopped
  • 1 white sweet potato, peeled and chopped (optional)
  • 1 1/2 to 2 cups bone broth (or vegetable broth)
  • 1 teaspoon Herbes de Provence (or a mix of dried thyme, oregano, sage)
  • 1/2 teaspoon sea salt
  • 1 can full-fat coconut milk
  • 2 tablespoons lemon juice
  • 1/4 teaspoon lemon zest, plus extra for garnish
  • Chopped fresh parsley to garnish
Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Trim the woody ends from the asparagus. Toss the spears with 2 tablespoons coconut oil, a pinch of sea salt, garlic powder, and Herbes de Provence.
  3. Arrange asparagus on the baking sheet and roast for 20–25 minutes, until tender and lightly browned but still green. Reserve a few spears for garnish if desired.
  4. While the asparagus roasts, slice the leek and chop the cauliflower and white sweet potato.
  5. Select the Instant Pot’s Sauté function and add the remaining tablespoon of coconut oil. Sauté the leek and garlic 2–3 minutes until fragrant and softened.
  6. Add the cauliflower, sweet potato, 1 1/2 cups bone broth, Herbes de Provence, and 1/2 teaspoon sea salt. Cancel Sauté.
  7. Close the Instant Pot lid, seal the valve, and cook on high pressure for 4 minutes (Steam). When the time is up, perform a quick release.
  8. Add the roasted asparagus (reserve a few tips if desired), coconut milk, lemon juice, and lemon zest to the pot.
  9. Puree the soup with an immersion blender until smooth, or transfer carefully to a high-speed blender in batches. Add more bone broth or coconut milk to reach your preferred consistency.
  10. Taste and adjust seasoning. Serve garnished with chopped parsley, extra lemon zest, and reserved asparagus tips.
Notes
If you’re making this soup without an Instant Pot: sauté the leeks and garlic in a large pot over medium-high heat with coconut oil. Add the cauliflower, sweet potato, and enough broth to cover the vegetables. Bring to a boil, then reduce heat and simmer, covered, for 15–20 minutes or until tender. Stir in the roasted asparagus and coconut milk, then puree until smooth.
