- Beat the batter well after adding the eggs—about 5–8 minutes with an electric mixer—until thick and fluffy.

High-quality bar chocolate is excellent, but for this method chocolate chips work particularly well for shine and texture. Choose good-quality chips so the flavor stays rich and chocolaty throughout.

HOW TO BOOST CHOCOLATE FLAVOR
To make brownies taste intensely chocolatey, focus on a few simple ingredients:
- Melted chocolate: Melting a portion of the chocolate into the batter deepens flavor and improves texture.
- Dutch-processed cocoa powder: This cocoa has a smoother, less acidic, darker profile that contributes rich color and flavor.
- Instant coffee granules: A small amount (1 teaspoon to 1 tablespoon) enhances chocolate depth without adding a coffee taste.
- Salt: Salt intensifies both chocolate and sweetness. I use about 1½ teaspoons kosher salt (reduce slightly if using table salt).
- Vanilla extract: A splash of vanilla brightens and rounds the chocolate flavor.

Ingredients

- 12 ounces semisweet chocolate chips, divided

Instructions
- Line an 8×12″ aluminum or nonstick baking pan with parchment. Preheat the oven to 350°F.
