Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or use a nonstick baking mat to prevent sticking.
  • Using a bread knife, slice the croissant horizontally, leaving a small hinge on one side so the pastry opens like a book. This keeps the croissant intact while allowing you to fill it.
  • Spoon or pipe a generous amount of pistachio cream into the croissant pocket. Close the croissant gently and spread a thin layer of cream on top to help the chopped pistachios adhere. Sprinkle the roasted pistachios evenly over the top.
  • Bake for 15–20 minutes, until the pastry is warmed through and the top of the pistachio cream shows a light golden color. Oven times vary, so check after 12–15 minutes to prevent over-browning.
