My favorite breakfast – fluffy, buttery, topped with fresh fruit, drizzled with maple syrup and no questions asked – the BEST French Toast ever.
This French toast recipe is my absolute favorite. It comes out tender and fluffy with golden, slightly crisp edges and a rich buttery flavor with a hint of cinnamon. After years of experimenting with ratios and techniques, this version consistently delivers the texture and taste I want. It’s simple, reliable, and perfect for weekend mornings or any time you want a comforting breakfast.
For a couple of years I depended on a very limited cooking routine: eggs, toast, coffee, and the occasional takeout meal. But Sunday mornings became different — a ritual centered around making French toast. Repeating the same recipe each week taught me a lot about how small changes affect texture and flavor.

Over time I learned key adjustments that make a big difference: adding an extra egg for richness, a touch of sugar to encourage golden browning, using 2% or whole milk for creaminess, and folding in a bit of melted butter to deepen the buttery flavor. A dash of cinnamon and a splash of vanilla round out the taste without overpowering it.

Choose thick-cut white bread when possible. Thicker slices soak up the custard-like batter without falling apart, giving you a pillowy interior and a nicely browned exterior. Be sure to fully submerge each slice in the egg-and-milk mixture so the center absorbs enough liquid for that soft texture. Shake off any excess batter before placing the slice on a preheated griddle or frying pan.
Cook each side over medium-low to medium heat until it turns golden and puffy — usually a couple of minutes per side. When both sides are golden and the center feels springy, transfer to a plate and serve immediately with maple syrup, fresh fruit, and a dollop of whipped cream if you like. The contrast of warm, buttery toast and cool, fresh fruit is irresistible.

The Best French Toast
The BEST French Toast — fluffy, buttery, golden brown, topped with maple syrup and a great reason to get out of bed.
Prep: 10 mins Cook: 5 mins Total: 15 mins Servings: 8 slices
Ingredients
- 5 large eggs, room temperature*
- 1 cup milk, room temperature (2% or whole preferred)
- 2 tablespoons melted butter, cooled to room temperature
- 1 teaspoon vanilla extract
- 2 tablespoons granulated sugar
- 1/4 teaspoon ground cinnamon
- 8–10 slices thick-cut white bread
- Oil or non-stick cooking spray for greasing the pan or griddle
- Fresh fruit, maple syrup, and whipped cream for serving
Instructions
- Heat a large frying pan or griddle over medium-low to medium heat. Lightly grease the surface with about 1 teaspoon of oil or use non-stick spray.
- In a large shallow bowl, whisk the eggs until smooth. Add the milk, melted butter, vanilla, sugar, and cinnamon, and whisk until the mixture is uniform and there are no streaks of egg.
- Dip each slice of bread into the batter, making sure both sides are well coated. Let the bread soak briefly so the center absorbs the custard, then lift and let any excess drip off.
- Place the soaked slices on the hot griddle. Cook for 1–2 minutes per side, or until each side is golden brown and the interior is set. Adjust the heat as needed so the toast cooks through without burning.
- Repeat with the remaining slices. Serve hot with maple syrup, fresh fruit, and whipped cream if desired.
Notes
*To bring eggs to room temperature quickly: place them in a bowl of lukewarm water for five minutes. To warm milk quickly, microwave briefly in 10–15 second bursts until slightly warmed but not hot.
Variations and tips: Use brioche or challah for an even richer result. For extra flavor, add a pinch of nutmeg or a tablespoon of orange zest to the batter. If your bread is very fresh and soft, allow it to sit uncovered for a few minutes so it soaks without falling apart. Leftovers can be stored refrigerated and reheated gently in a skillet or oven until warmed through.
