This chocolate icebox cake is a no-bake, no-fuss dessert made with store-bought thin and crispy chocolate chip cookies layered with a rich mascarpone chocolate whipped cream. It’s an effortless way to create an impressive layered cake without turning on the oven.
On a personal note, our family grew by one this week: our baby girl arrived on June 12th and we are completely smitten. Between late nights and an older brother still learning to share, we’re soaking up the newborn cuddles and settling into our new routine. What is an icebox cake?
Icebox cakes date back to the era before household refrigerators were common. The idea is simple: layer thin cookies with whipped cream, chill, and let the cream soften the cookies. After several hours in the refrigerator the cookies absorb moisture and the whole dessert takes on a cake-like texture that’s easy to slice.
Icebox cakes are ideal for warm weather because they require no oven time and can be prepared ahead. This version is elevated with mascarpone folded into the chocolate whipped cream to create an ultra-creamy filling between the crisp chocolate chip cookies.
What type of pan is best to make an icebox cake?
An 8-inch springform pan is recommended. The removable sides make it easy to lift the cake free for a clean presentation and simple slicing. This pan size allows for five cookie-and-cream layers each, resulting in a tall, impressive cake.
Can I use a different pan?
If you don’t have a springform pan, a deep 8-inch cake pan with at least 3-inch sides can work. Removing the cake neatly will be more challenging, but it’s doable. If you only have a 9-inch pan, you can either reduce to four layers of cookies and cream (total eight layers) or keep ten thinner layers and accept that the cake won’t reach the top of the pan.

Making the cake
This is one of the easiest layer cakes to assemble. Use thin, crispy chocolate chip cookies—store-bought varieties like Tate’s work well—but homemade thin cookies are fine if you prefer. The goal is crisp, flat cookies that will soften evenly when chilled.
To make the chocolate mascarpone cream, first chop and melt bittersweet chocolate, then let it cool. Whip heavy cream with mascarpone, sugar, and vanilla until nearly stiff peaks form. Fold the cooled melted chocolate into the whipped mixture; as you fold, small chocolate shards form throughout the cream for pleasing texture. If you prefer a uniformly chocolate cream, whip the whipped cream and mascarpone separately before combining the chocolate into the mascarpone and folding everything together.
Layering the cake
Line the bottom of an 8-inch springform pan completely with a single layer of cookies, breaking pieces as needed to fill gaps. Spread about 1 cup of the chocolate mascarpone cream over the cookies, smoothing with a spoon or an offset spatula. Repeat cookie and cream layers four more times for a total of five cookie layers and five cream layers, finishing with cream on top. The pan will be full.
Cover the pan and refrigerate overnight so the cream softens the cookies and the flavors meld. Chilling for at least 8–12 hours is ideal.
How to remove the cake from the pan
Run a thin knife around the edge to loosen the cake from the sides, then unlatch and remove the springform ring. If you want to transfer the cake from the springform base to a serving plate, do so carefully; leaving the cake on the pan base and sliding the ring back on for storage is often easier and safer.

How to store the cake
Store the cake in the refrigerator, ideally in the springform pan. If you left the cake on the springform base, slide the ring back over and lock it, then tent with foil. Refrigerated, the cake will keep well for about 4–5 days if it lasts that long.

Ingredients
- 3 — 7 oz packages thin and crispy chocolate chip cookies
- 8 oz bittersweet chocolate
- 2 ½ cups heavy cream
- 8 oz mascarpone cheese
- ½ cup sugar
- 1 teaspoon vanilla
- Chocolate shavings for the top (optional)
Instructions
- Finely chop the chocolate and place it in a microwave-safe bowl. Heat in 30-second increments, stirring between sessions, until fully melted. Let the chocolate cool for at least 20 minutes.
- In a large bowl or stand mixer, combine 2 ½ cups heavy cream, mascarpone, sugar, and vanilla. Beat on medium speed until stiff peaks form.
- Fold the cooled melted chocolate into the whipped mixture until combined. Small chocolate shards will remain throughout the cream, adding texture.
- Line the bottom of an 8-inch springform pan with a single layer of cookies, breaking them as needed to fill gaps.
- Dollop about 1 cup of the cream over the cookie layer and spread evenly to fully cover the cookies.
- Repeat the cookie and cream layers four more times for a total of five cookie layers and five cream layers. You will finish with a top layer of cream.
- Cover the pan with plastic wrap and refrigerate overnight (about 12 hours) to allow the cookies to soften.
- Before serving, run a knife around the edge of the pan to loosen the cake, then remove the sides of the springform. Decorate with chocolate shavings if desired and serve cold.
